Oxymore is François’s oxidative Chardonnay, the counterpoint to his topped-up wines. While cuvées like the Cuvée du Professeur are topped up for freshness, Oxymore takes the traditional Jura route: it is aged sous voile, under a veil of flor yeast, in barrels that are deliberately left un-topped. Production is tiny, from just one or two barrels.
The name is a play on “oxymoron”, and it suits a producer best known for topped-up wines also making an oxidative one. This is perfectly made for gastronomy!

The 2020 Oxymore has the subtitle Veil Number 4, because it was aged for four years under a veil of flor yeast. It’s a lighter oxidative (biological!) white, with faint curry, developing some nutty notes with a little time in the glass. It’s gentle and lighter, easy to drink, with a medium-bodied, chalky, dry palate and a long, tasty, salty finish. 95 points
