2022 François Rousset-Martin Savagnin Sous-Roche Professeur

$280.00

The Cuvée du Professeur is Savagnin from Sous Roche, the lieu-dit directly beneath the great rock of Château-Chalon and the village’s best-known and most prestigious site. It is named after François’s father, who owns these vines and was a professor at the University of Dijon.

Although the site entitles the wine to the Château-Chalon appellation, that would require ageing it under the voile for years. François tops up the barrels instead, so it is labelled Côtes du Jura. It is effectively a topped-up Château-Chalon, which makes it the clearest illustration of what he is known for.

Nicolas Greinacher, Vinous

On par with the gorgeous 2019, the 2022 Côtes du Jura Savagnin Cuvée du Professeur won me over instantly. Delicious lemon tart, flintstone, jasmine and ripe yellow apple are all dialled up. Medium-bodied, concentrated and so intense, the 2022 bursts with vivid energy on the mid-palate, finishing with a laser-like focus on the persistent close. 95 points

Luis Gutiérrez, The Wine Advocate

We sampled the unbottled 2022 Savagnin Cuvée du Professeur, which feels very young and subtle. It has an ethereal quality about it, super elegant, subtle and insinuating, super tasty and long, with the salty character. There are 2021 versions of both this and Vignes Aux Dames that he’s going to age even longer, possibly 50 months in cask. 97–98 points
