The Chavost Cooperative, established in 1946 in Chavot-Courcourt in the Vallée de la Marne, oversees more than 70 hectares of vines. With a commitment to sustainability and minimal intervention, Chavost has crafted a reputation for its natural, artisanal Champagnes that are now highly regarded by enthusiasts.

Their vinification process focuses exclusively on the first pressing of the grapes, achieving a vibrant and fresh style. The wine is aged 70% in stainless steel and 30% in oak barrels and crafted from a blend of Chardonnay, Pinot Noir, and Pinot Meunier. Spontaneous fermentation and malolactic fermentation with indigenous yeasts lend complexity, while no added sulphitess or dosage results in a bone-dry Champagne perfect for purists.

In the glass, the wine glows with light golden hues and a fine, persistent mousse. Aromas of toasted brioche, apple cider, lemon biscuits, sea spray, pear, chalk, and almonds intertwine with hints of apricots and nectarines.
