This cuvée is a blend of 70% Savagnin and 30% Chardonnay, sourced from the Les Nouvelles and Viaduc vineyards. The grapes are cultivated following biodynamic principles, though the estate is not officially certified. The winemaking process is entirely natural, with no added sulfur, commercial yeasts, or fining agents. The wine undergoes a non-oxidative fermentation, meaning it is topped up during aging to prevent exposure to oxygen, preserving its freshness and minerality. The Chardonnay comes from a small limestone and clay vineyard, aged in stainless steel to maintain its purity.
