The grapes are handpicked around mid to end of septembe, to preserve the freshness. Spontaneous Fermentation with pied de cuve. About 30% whole bunches. 4-5 days of maceration then softly pressed. Aged for 8-10 months in concrete egg tanks, stainless steel and ceramic vats on lees. Spontaneous MLF. No fining, wide filtration.
Spring 2023 was rainier than in recent years, which required more careful and accurate work in the vineyard, particularly in canopy management, to prevent any potential fungal diseases. Thanks to the lower T° and good ventilation of our altitude vineyards, downey mildew attacks were contained. The heat of July and August did not put any water-related stress on the vines, thanks to more than sufficient water reserves following the rainy spring. The good temperature ranges between day and night in late August and the first part of September allowed the grapes to reach optimal ripeness. The Sangiovese for the Sambrena was picked between the 15th and 19th of September.
