100% Sangiovese. Age of vines are 20 years, yield 35 hl/ha. Grown on sandstone soils at an altitude average of 500 m asl. Plantation density 5500 vines/ha.
The grapes are handpicked and selected to ensure an accurate degree of maturation and a healthy state. Spontaneous Fermentation with Pied de cuve in stainless steel tanks. Extraction is done through pumpovers and punch downs. Total time of maceration 15-20 days. Spontaneous Malolactique Fermentation in stainless steel tanks. 16 months in 30 hl oak casks and ceramic jars (10%). No fining, wide filtration.
The weather in the vintage year 2021 was quite regular. Rains in spring enabled good foliage development, and provided abundant water supplies for the drier summer months. In springtime a little frost delayed the growing of vegetation, without affecting the crop. From late August, the temperatures remained quite high during the day but dropped considerably during the night. This significant temperature variation resulted in full maturation of the fruit. The month of September was pretty fresh and dry, that lead the grapes to a very slow ripening, while the sanitary conditions were perfect. The Sangiovese from the sandy soil was picked between the 1st and 10th of October.
