Albillo Mayor 2023 is made from fruit sourced from a trusted grower in Peñaranda, José, from the village of Casanova. The grapes were foot-stomped and basket-pressed, with the juice settling for 24 hours before being transferred to a 500L François Frères puncheon and a smaller François Frères barrique. After one year in oak, the wine was racked with its fine lees into stainless steel for a further five months of élevage, then bottled in January 2025. Production is limited to just 863 bottles.
