La Chaux is a tiny 0.4 ha parcel named after one of the plots in Château Chalon that has limestone soils with some stones and marl. The vines are about 65 years old here. La Chaux is aged for 14 months in barrel on its fine lees in the ouillé (topped-up) style.
The nose is immediately captivating, with ripe pineapple, candied lemon and preserved citrus woven through with salted butter, almond and a gentle note of spice. The palate is beautifully poised, pairing a creamy texture and hints of beeswax and toasted nuts with a laser-like line of acidity and a firm, wet-stone minerality that drives the finish. It has the depth and polish of fine white Burgundy yet is unmistakably Jura. This is really superb.
