2023 Alice and Olivier de Moor Chablis 1er Cru Vau de Vey

One of two de Moor vineyards in premier cru climats, Vau de Vey is on the left bank of the River Serein. It is composed of Kimmeridgian marl and limestone, with a south and eastern exposure, meaning it mainly gets morning not afternoon sun. It makes it one of Chablis’ cooler climats. For this vintage Vau de Vay was aged initially in demi-muids (600 litres) then after a year blended into a foudre where it aged another year. It is well-balanced and precise with minerality without excessive acidity. Unsurprisingly it will be even more interesting if it can enjoy more aging.
