La Canaña 2023 – coming from the plot that was the first purchased by TK, is almost always the last to be harvested. Facing north, with Tinto Fino and Valenciano predominantly from reds, and Alarije or Malvasia Riojana, Albillo Mayor and Pirulés from whites. The grapes were hand destemmed, including 40% whole clusters and fermented with indigenous yeasts, spending 15 days on the skins. After pressing with a basket press, the wine was transferred into a 500L third fill Rare Francois Freres puncheon. After 12 months it was racked clean off its lees and transferred back into the same barrel with Clarete lees. The wine was bottled after 16 months elevage. 679 bottles produced. 96 points
