Cuvée 11,12,13… brings together fruit from all of the estate’s parcels in Essoyes, a Côte des Bar terroir of deep clay soils that give both aromatic intensity and freshness. Crafted in the solera style, it draws on every harvest from the domaine’s first in 2011 through to 2020, preserved in large foudres that build depth and complexity over time.
The wines are aged for nine months in barrels and demi-muids, with the lightest possible touch — spontaneous fermentation with indigenous yeasts, no fining, no filtration, no added sulfites, and no dosage. Even the cold stabilization happens naturally, thanks to the winter frosts. The result is a Champagne that vibrates with energy and tension, layered with citrus, spice, and a distinctly mineral edge that lingers beautifully on the finish.
