Founded by Alice and Olivier de Moor, both trained oenologists, this organic estate is based in Courgis, near Chablis. They began farming organically in 2005, with biodynamic practices gradually integrated thereafter. Their estate has grown from its initial plantings in 1989 to around 6–10 hectares, including dedicated Aligoté plots in Chitry-le-Fort.

This Bourgogne Aligoté comes from a 1.3-hectare parcel in Chitry-le-Fort, planted on brown clay with white marl soils. It’s 100% Aligoté, a variety often overlooked but revitalised here with care and precision.
