From a single hectare of thirty-year-old vines rooted in limestone and facing south, this wine stands as one of the estate’s true benchmarks. Stéphane Bernaudeau farms biodynamically, harvesting Chenin Blanc by hand with the utmost care. Fermentation starts naturally with indigenous yeasts in barrel, and élevage continues for 12 months on fine lees, also in barrel. Bottled unfined and unfiltered, the result is as pure as it gets.
In the glass, the wine shines a brilliant yellow. The nose is lifted with white fruits, clove, and a subtle touch of oak. The palate is both rich and vibrant, marked by deep minerality and a saline edge. The finish lingers beautifully, with nuances of almond and honey. Decant for at least an hour to let the wine reveal its full depth. Perfect alongside white fish, shellfish, or an elegant seasonal salad.
