From 2017. This cuvée is composed entirely of Chardonnay from vineyards situated on the Vincelles terroir in the Marne Valley. The vines, averaging 35 years of age, are planted on clay-limestone soils with silty components, typical of the area, and face south and southwest to maximize ripening. The vineyards are farmed according to organic principles, with all vineyard work carried out manually to preserve fruit integrity. Harvesting is done by hand with strict selection of bunches in the vineyard.
Vinification was divided between oak barrels (40%) and stainless steel vats (60%) to balance texture and aromatic freshness. Fermentation occurred with indigenous yeasts, followed by natural clarification by gravity. No fining was used, and malolactic fermentation was managed selectively depending on each lot to preserve the wine’s tension and balance. Bottling took place in March 2018.
The wine was aged on its lees for 24 months before disgorgement in March 2021. No dosage was added, resulting in a Brut Nature expression that reflects both variety and terroir. Production was limited to 1,200 bottles.
