This Riesling comes from 1 hectare of vineyards in Gueberschwihr, Eguisheim, and Westhalten, with vines averaging 45 years old and yields of 50 hL/ha on clay and limestone soils. The grapes are pneumatically pressed with a small sulphur addition and fermented in a combination of stainless steel (80%), new 500L oak barrels (15%), and ceramic vessels (5%). The wine is aged for 10 months across these vessels with multiple rounds of lees stirring and a single racking, then bottled without fining or filtration, with a final addition of sulphur at bottling.
