The grapes from La Seca are used for Obertura (only 2,000 bottles in its inaugural 2022 vintage, the name nodding to Manuel’s musical past). 100% Verdejo.
This project leans into a lower-intervention approach. Obertura is aged for one year in oak followed by six months in stainless steel. Manuel is also looking for another vineyard in Alcazarén with similar characteristics to increase production. Frost remains a significant risk in this area, but he values the limestone-rich soils formed from materials washed down from the nearby plateau.

The just-bottled 2023 Obertura fermented and matured in used 500- and 600-liter barrels for 21 months, and he uses even less sulfur than in the family project. The wine is unfined and unfiltered, and this year, it’s a little cloudy (seems a question of the vintage, as the 2022s are clear and the 2023s cloudy). The nose denotes the ripeness of the fruit, which is more yellow than white and a little more exuberant, with a di!erent profile from the 2022 I tasted last year but keeping some lemony notes and also a hint of reduction. With time in the glass, it develops an acute note of chicken broth. Think umami. This hits the scale at 14.3% alcohol, but it’s still fine- boned and keeps the poise with good freshness and acidity. It finishes dry and long. 2,600 bottles produced. It was bottled in May 2025. 93 points
