This wine is made from Melon de Bourgogne vines grown in the Yonne department in the north of Burgundy. (Most Melon now is now grown in the Loire Valley to make Muscadet not in Burgundy, where it originated.) It includes both négoce (2/3) and estate (1/3) Melon de Bourgogne. The vines are approximately 30 years old. The grapes are directly pressed then aged on their lees prior to bottling. This release had extended time in tank, which meant more settling, and no need for any filtration. Certified organic. 12.5% ABV.
