2023 Alice and Olivier de Moor Chablis Coteau de Rosette

This cuvée comes from 30+ year-old Chardonnay vines in a prized one-hectare parcel planted on classic Kimmeridgian soils, with eroding slopes, Portlandian limestone and more clay than their other plots.

The fruit is fermented slowly and naturally, including full malolactic fermentation, before spending 11 months ageing on its lees in an old cellar beneath Olivier’s grandparents’ house. The extended élevage builds texture and complexity while retaining the mineral drive and tension typical of Chablis.

Texturally rich but still precise, with citrus oil, lemon curd, golden apple, white flowers and flint, alongside subtle brioche and salted-butter notes from the lees ageing. The palate is concentrated and creamy through the mid-palate, finishing with saline acidity, chalky minerality and a long, savoury finish.

From a single parcel, this wine is was aged in demi-muids for one year then aged in foudre for one year. It has both freshness and a steely minerality which is remarkably direct. It will be a wine to keep for many years.
