From old-vine Savagnin planted on blue marl soils typical of the Jura, which give natural structure and longevity. Biodynamically farmed. Vinified sous voile (under flor yeast) for a period, in neutral barrels, evoking traditional Jura oxidative styles but still precise and pure. No fining/filtration, minimal sulphur at bottling.
