Trousseau from Les Corvées vineyard, with vines aged between 20-45 years old. The soils here are gravel on marl. De-stemmed by hand, then placed in a tank and filled with CO2. Gentle maceration for two weeks in tank. Transferred to old 3,000L éclair and amphora to finish ferment and aged for 12 months. 10mg/l SO2 before bottling.
