Domaine Hervé Souhaut, founded in 1993 in Ardèche, sits opposite Hermitage and has grown through new plantings and acquisitions of old vines (50–100 years). Hervé, a biologist turned winemaker, practices biodynamic farming without certification, focusing on Syrah, Gamay, and Roussanne. Grapes are hand-harvested, fermented with indigenous yeasts, and vinified with minimal intervention.
