$87.50

“Roucas” — 30% Grenache, 30% Syrah, 20% Cabernet Sauvignon, 20% Cinsault
From limestone and clay soils. The fruit is handpicked, fully destemmed, fermented with indigenous yeasts and aged in concrete eggs.

Dominique Hauvette has been crafting wines in the northern foothills of the Alpilles in Provence since 1988. Just outside Saint-Rémy-de-Provence — known for its Roman ruins and as the place where Vincent van Gogh painted The Starry Night — lies Domaine Hauvette.

The vineyards sit in a rugged, wild landscape of clay and limestone soils that retain precious moisture through the dry summer months. The Mistral blows relentlessly, and garrigue surrounds the vines, shaping the character of the wines. Originally a lawyer in Savoie, Hauvette moved south in the early 1980s in search of sunshine, retrained in oenology, and has since built one of France’s most respected domaines.

Today, with 17 hectares under vine, her wines are widely regarded among the finest in Provence — and well beyond. In 2020, La Revue du Vin de France named her Winemaker of the Year and awarded the domaine its highest 3-star rating, recognising over three decades of uncompromising work.

Farmed biodynamically since 2003 (organically prior), the old vines are handled with meticulous care — hand-harvested, carefully sorted, and made with minimal intervention. The result is wines of purity, structure and remarkable finesse.
