The grapes come from old vines planted on flint and limestone soils, which give the wine its unmistakable fumé (smoky, mineral) character. Viticulture is meticulous and organic, with extremely low yields and every bunch carefully sorted. Fermentation is spontaneous with native yeasts and takes place in custom-made oak barrels (“cigars”) designed by Dagueneau to increase lees contact and texture. The wine is then aged on fine lees for extended periods, adding depth and dimension.

In the glass, it’s both powerful and refined — bursting with citrus, green apple, quince, flint, and subtle smoke, balanced by crystalline acidity and an almost electric energy. It’s a Sauvignon Blanc of remarkable intensity and longevity, proving that Pouilly-Fumé can produce wines of world-class stature and soul.
