A beautiful Savagnin from Arbois-Pupillin, this wine was macerated and fermented for several months, right through to the following April, in a traditional Georgian qvevri. When Tony felt the extraction had reached that perfect point of intrigue, the contents were gently pressed and the juice returned to the amphora to age.

The result is a naturally unfiltered, deeply expressive wine that shines alongside anything with umami. It’s a brilliant example of how Savagnin can undergo extended maceration while still holding onto its distinct aromas and flavours. Complex, textural, and utterly captivating.
