Les Chazaux is another of the old vineyards looked after by Nicola Jacob. It is located right next to the municipality of Augea and has about 3.5 hectares of extension mainly planted with Poulsard but also with some rows of Trousseau. The grapes of Les Chazaux are completely destemmed and thanks to the action of indigenous yeasts, they begin fermentation in fiberglass containers . The wine is then refined in wooden barrels of various sizes now exhausted.
