Michel employs the same technique used for Jura’s famed Vin Jaune, though that must be made from Savagnin. Now six years old, this wine remains remarkably fresh and will continue to age beautifully for years, despite never having had sulphites added.

Sourced from the La Fauquette vineyard, this wine is made using the ‘sous voile’ method from the rare Melon à Queue Rouge, a Jura-exclusive mutation. Unlike other white cuvées, the 400L barrel is not topped up, allowing a thin veil (voile) of yeast to form, protecting the wine while encouraging gentle oxidation that imparts nutty, spicy complexity.
